In our hands, the fruit that would otherwise go to waste becomes tasty juices, smoothies, shots and other goodies. We sort, wash and press. We let the flavors vary according to what comes in. The little that is left over, or that is not fine enough to be a drink, becomes soil and fertilizer. So that new fruits and vegetables can grow.
